Wedding Cookies



I tend to think that cookies are a good thing to bring to most occasions.  When planning our wedding, I had a grand plan of having a cookie table that people could contribute to and then take home at the end of the night.  However I was sad to find out once we picked our venue that due to food safety laws no homemade food could be served there.

After some brainstorming - we came up with the idea of cookies in a jar.  I figured this was even better than taking away already made cookies - as our guests could take them home, and have easy delicious cookies whenever they wanted.  I set out to find a recipe with ingredients that just fit inside a quart jar, had a variety of colors, and were tasty - and I lucked out to stumble upon this monster cookie recipe.

Not only are these cookies simple to make, but they are delicious!  They are sort of a like a chocolate chip, M&M and oatmeal cookie, all mixed in together into one chewy cookie.  And they make great gifts either in a jar, or in cookie form :).


Note: If you are baking in the UK - make sure to get large whole rolled oats.  In the states I always just bought the Quaker oats for baking, but I've found that in the UK they come chopped up too small, so they are not as good for cookies!



Monster Cookies
113 grams (1/2 cup) butter - melted and slightly cooled
1 egg
1 tsp vanilla

Ingredients in jar, in this order:
1 1/3 cup flour
1 tsp baking powder
1 tsp baking soda
1/4 tsp salt
1/2 cup brown sugar
1/2 cup white sugar
1/2 cup chocolate chips
1/2 cup M & Ms (chocolate chips and M&Ms are mixed together)
1 1/3 cup rolled oats

To Make:
Preheat oven to 170c (350f)
1. Mix wet ingredients together.
2. Add dry ingredients and mix well.  (If they are not coming from a jar, then add then a few at a time, to make mixing easier)
3. Drop by rounded spoonfuls (mine where 1 1/4 ounce) onto ungreased cookie sheet.  Bake for 9-11 minutes, rotating half way through - until the edges are slightly browned and middles are just barely cooked.

Note: If putting ingredients into the jar - then pack them down after each addition, so that the ingredients fit tightly together and don't get disturbed.

Spiced apple cake

I have this dream that someday I will post recipes in a timely fashion for various holidays.  In fact I had made this apple cake recipe...
